Place whole chicken on a flat surface. Truss chicken.
Put the chicken in a resealable plastic bag in a rimmed dish. Pour ¾ of the TATEMADA Guajillo Salsa jar, reserving the rest for serving later. Seal the bag and rotate it around to distribute the marinade. Refrigerate for 1 hour.
Remove the chicken from the marinade and discard the marinade. Let sit at room temperature for 30 minutes.
Bake at 350 °F for 1 hour.
Baste the chicken with reserved TATEMADA Guajillo Salsa. And bake at 350 °F for 30 minutes.
